1 lb. package Healthy Harvest Pasta, Rotini1 package dry Italian Dressing mix1/2 cup red wine vinegar2 Tablespoons Olive Oil1 cup chopped red onion1 cup chopped red tomato2 large cucumbers, chopped1 cup brocoli, chopped1 cup carrots, chopped
Cook the pasta, drain and set aside to cool. Place the chopped vegetables in a large mixing bowl. Mix the dressing in 1/2 cup of red wine vinegar, add olive oil and pour over vegetables. Stir in cooled pasta and chill one hour before serving.

VELVETSAPPHIRE
I fixed this years ago but someone threw out my recipes when they helped me move and I couldn't remember what went in it. I don't care for the onions but you can pretty much mix in whatever vegetables you like. I mix all this in with fettucini noodles and it is delicious (and I'm a picky eater) - 4/28/08
