Summer Chick Pea Salad

Ingredients
1 can garbanzo beans1 large cucumber diced1 medium or 2 small tomatoes dicedI small red onion diced1/4 cup sliced black olives1/3 cup fresh cilantro3 Tbsp fresh mintjuice of 1-2 limes3 Tbsp yummy olive oil1/2 tsp cayenne peppersea salt to taste
Directions
Mix veggies and herbs with beans
Separately combine olive oil, lime juice, cayenne and salt to create dressing.
Add dressing to salad and let rest at least 15 mins.

Serving Size: Serves 4-5 as side dish

    Chick peas are my go-to food! Being vegetarian I find use for them in almost all my everyday meals. This salad is great for lunch or dinner! I substitute black olives for green ones or non at all :) - 1/20/18

    I had to make it without the olives, simply because I didn't have any. Substituted red onion for a white Spanish onion for the same reason. Delicious. The cayenne adds a nice kick. - 6/19/15
