Kristy's Sauteed Walleye

Ingredients
2 lbs fresh caught walleye3/4 c. almond milk, unflavored, unsweetened variety1 cup brown rice flour (such as Bob's Red Mill)1 egg, beaten4 tablespoons coconut oil
Directions
Heat a large deep skillet with coconut oil on medium heat. Beat egg and add almond milk. Dredge fish in egg mixture, then dip in brown rice flour. Test heat of coconut oil with a pinch of the flour-if it sizzles and dances, you're ready to cook. If not, turn the heat up higher and add one piece of fish and cook until one side is beginning to get gently golden. When you turn this first piece, the skillet is hot enough to fill with the remainder of the fish (or fry in batches if it will not all fit.) Turn once when fish is golden brown. When second side is golden, check one piece for flakiness and remove to a paper towel covered plate to drain.
