thai green curry with halibut

Ingredients
1/4 tablesp coconut oil1/4 c red onion1/4 c carrot1/4 c red/yellow pepper1 mushroom1/2 tbsp green curry paste1/3 c cocnut milk4 oz halibut1/4 c cooked brown rice
Directions
heat oil over med heat add onion/carrot/pepper cook stirring occassionally til onion soft(4min) add mushrooms cook 4 min stir in green curry paste cook 1 min add coconut milk bring simmer lay fish in pan move veggies around cover cook simmering 10 min til fish opaque and flakes easiliy serve over 1/4 c cooked brown rice
