Cauliflower cheese casserole

Ingredients
whole head Cauliflower or frozen 2 cups, chopped 1 inch flowets1 cup shredded chedder cheese4 tbsp of lowfat mayo1 tsp salt
Directions
cook cauliflower in 1inch of water with salt. Steam until tender, about 10 mins on medium high heat.
Stir together cheese and mayo. Drain Cauliflower and place in a casserole dish. Spread cheese mixer over top of Cauliflower. Bake in a 350 degree oven for about 20 mins. Until cheese is melted and slightly browned.
Serving 4 half cup

    I love this recipe! I use it all the time.
    When I make it I add onions, and kale to the cauliflower.

    I use low-fat cheese and "lighter than light" mayo, so I end up with just a little more than half the calories and fat (carbs and protein pretty much stay the same). - 4/15/11

    Really really good. I added some chopped onion and about a tbsp of dijon mustard to the mix. Good way to get some fat and veggies in... I tend to always be low on fat. - 11/19/08
