Eggs Muffins Vegetarian

Ingredients
*Egg - 4 Red Ripe Tomatoes, 123 grams Eggplant, fresh, 138 grams Winter Squash, 102 grams Zucchini, 203 grams Onion, sweet, raw, 3.4 oz Whole Milk / Vitamin D, .375 cup
Directions
Dice tomatoes,eggplant,squash,zucchini and onions and saute them until tender. Season to your liking.
Whisk milk and eggs together.
Place vegetable mixture in muffin tins and then spoon in egg mixture.
Bake in oven at 360F for about 30-40 minutes or until eggs have set.
