Cajun chicken with Colorful Couscous Salad

Ingredients
1 1/2 cups couscous9 oz boneless skinless chicken breasts1 1/2 cups frozen corn1 1/2 cups red bell pepper, chopped1/3 cup onion, choppedFresh Basil or 1 T dried basil1 1/2 t Cajun seasoningSalt and Pepper to taste
Directions
Prepare couscous according to package directions. Meanwhile place chicken breast on a greased baking sheet and sprinkle with Cajun seasoning.

Bake at 375 degrees until cooked through.

Combine corn, red bell pepper, hopped onions & chopped fresh basil in a small bowl, seasoning with salt and pepper if desired.

Serve chicken over couscous with the veggies on top.
