Cilantro Lime Fish

Ginger, ground, 1 tbsp Pepper, black, 1 dash Salt, 1 dash Limes, 4 fruit (2" dia) Onions, raw, 1 medium (2-1/2" dia) Chopped finelyOrange Roughy (fish), 6 ozCilantro, raw, 3 tbsp 2 orange roughy filets (or whatever fish you like). You can use more of less of the cilantro and ginger for taste.Squeeze the limes to get the juice. Again you can use more or less limes for flavor.
Rinse the fish and season with salt and pepper. In a smaller baking dish place fillets into dish. Sprinkle 1/2 of the ginger onto this side. Layer with onion and cilantro. Squeeze half the limes over the top and flip fillets over. Repeat on this side. Cover with foil and place in fridge for 30 mins. Preheat over to 375F and place foiled covered baking dish into oven. Bake for 20-25 mins until fish is done. Enjoy!
