2 (15 oz) cans black beans, rinsed1 (17 oz) can whole kernel corn, drained2 large tomatoes, chopped1 large avocado, diced1/2 red onion, chopped1/4 cup chopped fresh cilantroDressing1 Tbsp red wine vinegar3-4 Tbsp lime juice2 Tbsp olive oil1 tsp salt1/2 tsp pepper
1. Combine all ingredients in a large bowl.
2. Cover and chill.
3. Garnish with avocado slices or cilantro sprigs.

This is a great recipe! I made it for a bbq and I got a ton of comments on how good it is. The second time I made it I put all the ingredients together except for the avocado and stored it in the fridge over night so all the flavors melded together. Add avocado right before serving. I LOVE this recipe!! Colorful and flavorful and a unanimous hit. I add a couple diced peppers for spice as it's otherwise pretty mild, & omit the oil & add extra lime juice. Also good on hot dogs, salads, etc... omit the avocado and it will keep longer, but you're missing a whole layer of flavor! :) - 6/5/07

I've just made this and while I am no wizard in the kitchen, it came out great. Very tastey. Can anyone tell me how to figure out what the size of a single serving is? I see the whole thing makes 24 servings, but since I am watching cal., I need to know a single serving size. Thanks. - 1/27/09
