Ingredients
2 (15 oz) cans black beans, rinsed1 (17 oz) can whole kernel corn, drained2 large tomatoes, chopped1 large avocado, diced1/2 red onion, chopped1/4 cup chopped fresh cilantroDressing1 Tbsp red wine vinegar3-4 Tbsp lime juice2 Tbsp olive oil1 tsp salt1/2 tsp pepper
Directions
1. Combine all ingredients in a large bowl.
2. Cover and chill.
3. Garnish with avocado slices or cilantro sprigs.
4. Serve with tortilla chips.

    I added just a touch of sugar (about a teaspoon) to take the sharp edge off. One serving is about 3 ounces, which fills about seven baked tortilla scoops. Baked scoops are 10 calories each, so one scoop FULL of cowboy caviar is only 20 calories! - 11/25/07

    This is a great recipe! I made it for a bbq and I got a ton of comments on how good it is. The second time I made it I put all the ingredients together except for the avocado and stored it in the fridge over night so all the flavors melded together. Add avocado right before serving.     I LOVE this recipe!! Colorful and flavorful and a unanimous hit. I add a couple diced peppers for spice as it's otherwise pretty mild, & omit the oil & add extra lime juice. Also good on hot dogs, salads, etc... omit the avocado and it will keep longer, but you're missing a whole layer of flavor! :) - 6/5/07

    You definitely don't need the oil...I'm from Texas- so adding the cumin, garlic & pepper was great--to keep it kid friendly...I didn't add jalapeno pepper- BUT you could! DELISH - 7/17/09

    The olive oil isn't necessary and neither is the vinegar with the addition of more lime juice and I added cumin to kick it up a notch. My most requested recipe! And the baked Scoops are essential for parties. - 5/27/08

    I just made this and have only tasted it from the taste testing as I went along, but it's delicious. I added in some chopped red pepper, and used parsley instead of cilantro. I halved the oil for fewer calories. Can't wait to serve! - 3/1/09
