New Orleans Style Crab Creole

Ingredients
1-2 Tbsp Olive oil1 medium to large onion1/2 c celery2 pkgs premium lump crab meat1 can tomato paste1c Lowfat Milksalt, pepper, and cayenne pepper to taste
Directions
Sauté finely chopped onion and celery in 2 Tbsp olive oil. Add salt, pepper, and cayenne to taste. Add lump crab meat. Add tomato paste, then milk and simmer for 5-10 minutes until desired thickness is achieved. Water may be added for a thinner sauce or for use as a hearty soup. Serve over white or (preferably) brown rice.
