Vegan Lentil Loaf

Ingredients
2 cups cooked lentils2 cups cooked brown rice2 cloves (crushed)½ cup fresh parsley (chopped)2 stalks celery (diced)2 carrots (grated)One half teaspoon of peanut oilDash of fresh ground black pepperOne half teaspoon cumin2 tablespoons peanut butter (no salt type)2 medium onions (diced)2 sprigs fresh parsley to garnish
Directions
Serves 4 (unless you are really, really hungry)

* Heat oven to 350 degrees
* Combine all ingredients and then press into oiled loaf pan.
* Bake for 45 minutes. Do not over bake this dish
* Please check it often or it will be too dry.

Serve with big salad and you have a good meal. Enjoy

    I am going to try this tonight, but going to add about 1/4 cup of high-gluten (extra gluten added to bread recipe) white bread crumbs and see if that helps as a binder. - 4/3/10

    Mine was also crumbly, but very flavorful! I was short an onion, so I only used one and chopped it kind of chunky. I grated my celery along with my carrots. I also assumed the cloves in question were garlic cloves. It was absolutely delicious! I'll make it again! - 12/30/09

    I didn't have any celery so used 1 bunch of cilantro for taste, 1/4 yellow pepper and 2 large button mushrooms for volume. I also subbed tahini for the peanut butter and it tasted great... although mine fell apart too! Next time I will try tossing everything into the food processor. Thanks! - 10/13/09

    It was good but mine was crumbles. Not sure what it takes to make it a loaf. Maybe i need to cook my beans a bit more. Otherwise I am having it with a salad. THanks! - 6/22/08

    this is yum! the first time we made it, it was very loaf-like, the second time it crumbled apart (still yum!) so make sure you mush it around really good and then pack it tightly into the pan. lentil loaf, smashed potatos and corn makes a great stick to your ribs meal - 6/5/08
