African Peanut Sweet Potato Stew

Ingredients
1 onion, chopped2 jalapenos, seeded and finely chopped 2 teaspoons minced fresh ginger1 teaspoon minced fresh garlic2 teaspoons ground cumin1/2 tsp. sea salt1/2 teaspoon ground cinnamon1/4 teaspoon crushed red pepper1/4 teaspoon ground coriander2 1/4 pounds sweet potatoes, peeled and cut into 1 1/2-inch chunks2 (14.5) ounce cans chopped tomatoes2 (14.5) ounce cans chickpeas, drained and rinsed1 pound green beans, cut in 1 inch pieces (fresh or frozen) 1 1/2 cups vegetable broth1 cup of peanuts (shelled and peeled – no skin on them).
Directions
Makes 8 servings

lace 1/3 cup water, onion, jalapenos, ginger and garlic in a large pot.
Cook, stirring occasionally for 5 minutes.
Add cumin, cinnamon, salt, red pepper and coriander.
Cook and stir for 1 minute.
Add sweet potatoes, tomatoes, chickpeas, green beans, vegetable broth, and peanuts.
Bring to a boil, reduce heat and simmer for 30 minutes, or until potatoes are tender.

    Super delicious! In regards to quantity, it made 4-5 quarts of stew. The serving size used for the calculation must be 2 or even 2.5 cups. Really way more stew than needed for 2 people, but it tasted so good that the leftovers disappeared within a few days. I didn't even have to freeze any of it. - 12/13/08

    I would absolutely make this again! My thirteen-year-old brother who hates anything green and anything spicy, cleaned his plate and even served himself seconds. I served it with brown rice and it was incredibly filling. I added two tbsps of peanut butter, which helped bring out the peanut taste. - 1/10/09

    This is a great hearty stew, wonderful balance of flavours.
    I didn't have fresh jalaenpos so I used red and green chillis. It was a tasty spicey as opposed to hot.
    My dad who doesnt approve of non-plain foods, cleaned his plate.
    I don't think there is a better recommedation than that!

    My 2 year old, my vegan friend, and my family ALL loved it! Subbed 8oz of Porter and 4oz water for the veggie broth. Cooked spices and onion in pan and then put in the slow cooker with other ingredients and cooked on high for 6 hours - still turned out amazing! We will be making this again. - 5/4/12

    Really liked it, very different. Very filling! Interesting combo of flavors. My 10 yr old liked it, but picky 12 yr old and hubby wouldn't even try it. I halved the recipe and it still made PLENTY! I've been eating on it everyday and will take it to work for lunch. - 2/1/11

    I made this last night and we just loved it. I did start out by adding chicken but stuck to all the recommended spices and veggies. Also, instead of adding the peanuts, which i did not have, I used PB2, which is a defatted peanut powder. This allowed me to use it as a thickener and for taste - 1/13/11

    Sounds colossally wonderful. The sodium content is way too. I'll use dried chickpeas (soaked and cooked in advance, of course) and tomatoes canned without added salt. - 1/12/11

    Was very tasty! I realized too late that I was out of chickpeas so I substituted yellow lentils and it was wonderful! I also used fresh tomatoes instead of canned. I blended 4 and chopped two (for the chunks!). Wonderful spice blend! - 7/28/10
