Chipotle Aioli

Ingredients
6 T. mayonnaise4 tsp. lime juice2 garlic cloves, roughly chopped1 T. chopped chipotle chili en adobo (with sauce)4 T. chopped curly parsley3/4 tsp. ground cumin
Directions
Combine all ingredients in a mini food processor. Whirl till everything is smooth and well combined.


Chill before serving. Keeps well in the fridge for 2-3 weeks (and probably longer, but it's usually gone by then!)

    I mde this with Greek yogurt but fat cuts heat and with just the yogurt it was a bit too hot so I added 1 tablespoon of mayo. Perfect and yummy - 2/24/12
