Chicken-Veggie Stir Fry with Noodles

Ingredients
12 ounces linguine or spaghetti1 pound boneless skinless chicken breasts, cut into bite-sized pieces1/2 bunch bok choy, chopped1 bell pepper, chopped2 plum tomatoes, chopped1 cup edamame, shelledDrizzle of soy sauce2 cloves garlic, minced (optional)Hot sauce, ex. Sriracha (optional)Rice wine vinegar to taste (optional)
Directions
Cook noodles per package instructions.


While noodles cook, saute chicken, bok choy, pepper, tomatoes, and edamame; add soy sauce, as well as garlic, hot sauce, and/or vinegar if desired. Stir fry noodles with sauce, chicken, and vegetables.

    If you want to say a lot of calories, omit the pasta and replace with 2+ cups of shredded lettuce on a plate. I avoid white carbs and have found you can a very satisfying and highly nutritional meal without them. - 7/21/12
