Peanut butter and Banana Oat Muffins

Ingredients
1 cup old fashion rolled oats (not instant)1 cup 2% milk1 cup whole wheat flour1/4 cup Splenda brown sugar1/2 cup unsweetened applesauce4 tsp Just Whites1/4 water1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon1/3 cup Smart Balance Crunchy Peanut Butter2 medium overripe bananas1 tsp vanilla extract
Directions
Soak the oats in milk for about one hour.

Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce, mashed bananas, vanilla, peanut butter and water
Mix until combined.
In a separate bowl measure and whisk the dry ingredients together.
Add dry ingredients to wet and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.

This made 12 muffins and a small loaf pan. I separated it out and it would be about 18 muffins.

    Even after 25 minutes in the oven they were still kinda raw in the middle but the toothpick came out clean which is weird. Not to sure I will make this specific recipe again i might modify it to make it a little more thick - 1/29/11

    I will never again use Splenda due to the terrible stomach problems it gave me and has given millions of others. No recipe that contains splenda should be on this website as it is NOT healthy. It's very harmful.. - 9/10/10
