Spicy Curried Lentils

Ingredients
1 tbsp Olive Oil1/4 cup Onion1 tsp Curry Powder1 tsp Jalapeno Pepper, minced (or more, to taste)2 cups Vegetable Broth1/2 cup Tomatoes, chopped1/2 cup Potatoes, cubed1/2 cup Brown Lentils (dry)1 Bay Leaf1/2 cup Spinach, chopped1/2 juice of LimeSalt to taste
Directions
Saute onion, curry powder & jalapeno in oil in a nonstick skillet over medium heat. Cook until onion begins to brown, stirring often. Stir in broth, tomatoes, potatoes, dry lentils, and bay leaf. Reduce heat & simmer, uncovered, until lentils are tender, 20 to 30 minutes. Add spinach, lime juice and salt to taste.

Makes 4 servings.

Serving suggestions: Use as a filling in a tortilla or over rice. Great topped with Spiced Yogurt and Tomato Chutney.

    I definitely want to try this... sounds delicious. I am thinking of substituting sweet potato instead of white... I wonder how that will taste... and maybe serving it over a bed of spinach instead of rice to save on calories. - 5/24/08
