Half-Asleep Tortellini

* Zucchini, 1 cup, sliced * *Del Monte Petite Cut Diced Tomatoes, 1 cup (remove) * *Cheese Tortellini, 2 cup * Chicken stock, home-prepared, 1 cup (remove) * Basil, 0.5 tbsp * Garlic, 1 clove * Salt, 1 tsp * Pepper, red or cayenne, 1 tsp * Chicken Breast, no skin, 2 breast, bone and skin removed * Olive Oil, 1 tbsp
Really simple. Saute the garlic in the olive over low heat in a deep pan, dice up the zucchini and add it to the garlic. While that's cooking, cut up the chicken and season it with sea salt, cayenne pepper, crushed basil, and black pepper, to taste. Add the chicken to the (now translucent) zucchini mixture. Turn up the heat and saute for a few moments until chicken is no longer pink. Add the chicken stock and the tomatoes. Cover and left simmer until sauce reduces a bit. Then add the tortellini. Reduce the heat, replace the lid, and allow to cook for give or take five minutes (I went back to sleep at this step). After that, turn off the heat and you're ready to serve.
