2-3 bunches of parsley1-2 tomatoes, chopped1-3 scallions (green/spring onions), chopped1 cups Quinoa, cookedDried mint to taste1/4 cup extra virgin olive oil1 1/2 - 2 whole lemons
Rinse the Quinoa before cooking, follow instructions on packet to cook. While that's on, wash parsley, tomatoes and onions. Chop parsley very finely, the tomatoes into small cubes and the onions into thin slices. Allow Quinoa to cool after it is cooked before putting it in the salad. Put parsley, tomatoes, onions and cooked Quinoa in a bowl and mix with olive oil, mint and lemon juice, you may have to add more according to your taste. You can make this the night before, the flavour is even better he day after!
