quinoa broccoli protein bites

Ingredients
.5 cup uncooked quinoa - preparedaccording to package instructions1.5 cup Brocolli finely chopped broccoli .5 cup, chopped Onions 4 Tb Imitation Bacon Bits .25 cup Milk, Soy, Organic, Unsweetened, SILK (1cp/8oz) 4 large Egg.25 cup Vital wheat gluten baking spray (like Bakers Joy)
Directions
Cook the quinoa according to package instructions. let cool enough so you can work with it without burning yourself.

preheat oven to 350

Mix together broccoli, onions, bacon bits, and cooked quinoa. Add lots of salt and pepper if you want to.

whisk together eggs and soy milk then mix with quinoa mixture. then mix in the wheat gluten.

Spray mini muffin pan with baking spray

fill 24 mini muffin thingies with mixture and bake for about 20 minutes or until it looks done.

Serving Size: Makes 24 minimuffing size bites, 6 bites per serving
