Aimee's Italian Veggie Sautee for 1

Ingredients
Olive Oil2 cloves garlic, minced or sliced3 fresh basil leaves, chopped3 Tbsp raw onions, I prefer red, chopped1/4 cup chopped red bell pepper1/4 cup sliced zucchini1/4 cup strained garbanzo beans (chick peas)1/4 cup chopped tomato3 jumbo sliced olives2 large mushrooms slicedParmesean cheese to garnish (1/2 Tbsp)56 grams (2oz.) spaghetti, cooked
Directions
Heat olive oil in a skillet over medium heat. Add garlic and basil and sautee for about a minute. Add red peppers, onions, garbanzo beans, and zucchini and sautee for 1-2 minutes. Add mushrooms, tomatoes and olives and sautee until veggies are somewhat soft or to your taste.

Place over warm spaghetti and garnish with parmesean cheese (optional)! Enjoy!
