4 medium Lamb Shanks, fat trimmed off1/4 cup Wholegrain flour1 Tblspn Oil, Olive or Canola1 medium Onion, chopped2 medium Carrots, chopped2 rashers 97% fat free Bacon, chopped2 Garlic Cloves, minced1 can Salt Reduced Condensed Tomato Soup (@ 14.8oz US, 420 g Australian)2 cups Water1 tsp chopped Thyme or Oregano
1. Heat oil in skillet.
2. Coat shanks in the flour and brown in the skillet, remove.
3. Add onion, carrot and bacon to the skillet and saute for a couple of minutes.
4. Return the shanks to the skillet, pour in the tomato soup, water and herbs. Bring to the boil, reduce heat, cover and simmer for 1 1/2 to 2 hours, until lamb is tender.
