Southwest Breakfast Tacquitos

Ingredients
*Baked Potato, with skin, 1 medium*Egg Beaters Southwestern, 1/2 cup La Victoria Thick 'N Chunky Salsa, Medium, 4 tbsp *Whole Wheat Tortilla, 2 serving
Directions
Microwave potato just until it begins to soften slightly, about 2-3 minutes. Chop, leaving skin on.

Spray skillet with Pam. Sauté Potato until done and light brown. Add egg beaters and stir until scrambled.

Warm whole wheat tortillas.
Fill with potato-egg filling.
Place salsa on egg filling.
Roll tortilla burrito style.
Eat while warm.
