Stuffed Tomatos

Ingredients
1 box organic chicken broth (works well with beef or vegie too)1 lg. bag herb stuffing 1 tube ground sausage (used pork for this)10 large hollowed out tomatos (large green house or beef steak work well)1 pkg. mozzarella or provalone slices (8-10)
Directions
Scoop out tomatos like little pumpkins. Save away Tomato insides for another dish.
Bring broth to a boil in large pan.
At the same time, brown sausage in a fry pan.
When broth boils, turn off heat and add all the stuffing crumbs, mixing well so all the crumbs get moist. When sausage is done (do not drain), add to the stuffing and mix well.
Fill tomatos with sausage stuffing mix.
Top with cheese, and place under broiler for 5-8 min. or untill bubbly and light brown.
Makes 10.
