Quick Brown Rice Pilaf

2 tbsp Extra Virgin Olive Oil 1 small Onions, raw .25 cup, diced Celery, raw 2.5 serving Baby Bella Mushrooms (3 oz) 1.812 cup Chicken Broth, Simply Nature, Aldi (by JVENUS79) 4 serving Minute Brown Rice, 1/2c dry rice
1. Heat oil in medium saucepan on medium heat. Add onions and celery; cook 3 min. or until tender, stirring occasionally.
2. Add sliced mushrooms; cook 3 min. until tender, stirring occasionally. Add broth, stir and bring to a boil.
3. Stir in rice; cover. Reduce heat to medium low; simmer 5 minutes. Remove from heat; let stand 5 minutes.
Serving Size: makes 8 1 cup servings
