Blueberry Bran Muffins

1.5 cup Oat Bran 1 cup (8 fl oz) Yogurt, plain, skim milk 1 cup, packed Brown Sugar 0.5 cup Whole Wheat Flour 1 large Egg, fresh, whole, raw 1 cup, unthawed Blueberries, frozen (unsweetened) 1 lemon zested and juiced3 tsp Baking Powder 1 tsp Baking Soda 1 tsp Salt 1 tsp Nutmeg, ground 1 tsp Cinnamon, ground
Mix all the wet ingredients in a bowl (yogurt, egg, lemon). Add sugar and oat bran and combine until a paste.
Next, add the remaining dry ingredients (flour, baking powder, baking soda, salt, nutmeg and cinnamon). Mix until it is just incorporated.
Avoid over stirring. You may need to add a splash of fat free milk if the flour and dry ingredients are not readily incorporated.
Fold in the frozen blueberries. Place muffin liners in a 12-muffin pan and fill 2/3 of the way full with muffin mixture.
Bake at 350 F for about 15-18 minutes, until a toothpick inserted in the center is clean.
