Larabar-like Peach Pie bars

1 cup Dried Peaches 1 cup pitted dates (about 15 dates)1 cup sliced Almonds 1 tbsp Cinnamon, ground
Place the dates in a microwavable bowl, cover them in water , and microwave them for about 90 seconds. Drain and rinse the dates. No need to worry about drying -- any water remaining on them will help the mixture clump together. Add dates and remaining ingredients into a food processor. Pulse the misture until it begins to pull away from the sides and resemble a single mass. (If you pulse long enough, the mixture will turn into a ball. No problems with that, though my preference if to leave it a little chunkier). Line a loaf pan with parchment paper. Pat the mixture into the pan, pressing firmly and making sure the bottom of the pan is evenly covered. Put the pan in the freezer for at least 30 minutes. Slice the loaf into six pieces, and store them in the freezer until ready to use. (They can be refrigerated for a few weeks, and will be fine if you pack them into a lunch. The freezer just keeps them fresher longer and helps them hold their shape.)
