Broccoli-Cauliflower Quiche

Ingredients
1 prepared 9" pie crust1-1/2 cup chopped broccoli1-1/2 cup chopped cauliflower1/3 cup egg substitute1/3 cup egg substitute egg white2 tablespoons half and half or milk1/2 cup grated colby or jack cheese1/2 cup grated mozzarella cheese
Directions
Preheat oven to 350
Spread chopped broccoli and cauliflower inside pie crust. Whip egg substitute and egg white substitute and cream with a whisk for one and a half minutes. Pour mixture over broccoli and cauliflower in pie plate. Sprinkle cheese on top. Place in oven and bake approx. 60 minutes or until a toothpick inserted in the center comes out clean.

(NOTE: This will rise while baking and can overflow the pie plate on occasion, so you may want to put a drip tray under while it s baking. )
