1 1/4 cups cooked chopped chicken breast 1/4 cup diced English cucumber1/4 cup minced celery2 scallions, chopped1 tablespoon finely chopped fresh parsley1/4 cup light mayonnaise2 tablespoons fresh lemon juice1/8 teaspoon freshly ground pepper2 La Tortilla Factory Tortillas2/3 cup Arugula
Cook chicken until done, or use store bought cooked chicken. Combine the chicken, cucumber, celery, scallions, parsley, mayo, lemon juice, and pepper in medium bowl. Divide and layer the lettuce and chicken mixture on the tortilla. Roll up, fasten with toothpicks, and cut diagonally in half.
