1 oz Smoked Salmon (lox) 2 tbsp Cream Cheese 1 tbsp Kerry's Gold Pure Irish Grass-Fed Butter (Unsalted) (by VINNY8211) 3 large Egg, fresh, whole, raw 1 cup Spinach, fresh
Let cream cheese soften on the counter for 1 hour.
Blend cream cheese and eggs.
Add 1 pat of butter to skillet.
Pour egg mixture into pan and add spinach and smoked salmon.
Gently fold eggs,incorporating spinach and salmon until it is the consistency you desire.
