Crustless Spinach, Onion and Feta Quiche

1 medium onion, diced6 ounces Fresh Express Baby Spinach2 large eggs1/2 cup egg beaters (liquid substitute)1/2 cup all purpose flour1/2 tsp baking powderpinch cayenne pepper1 1/3 cups non fat milk1/2 cup feta cheese
Preheat oven to 400F.
Lightly grease a 10-inch quiche/tart pan (or a pie plate)
In a medium frying pan, cook diced onion with a bit of vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
In a large mixing bowl, whisk together eggs, flour, and baking powder. Whisk in milk, then stir in spinach-onion mixture.
Pour quiche base into prepared pan. Top with feta cheese.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.

Absolutely delicious and so easy to make. I used 4 eggs as we don't have Egg Beaters here in the UK and used reduced fat feta. As others have already commented it is a great recipe to use as a base for any type of quiche. I think this will become a staple recipe for me. Thanks for sharing! - 6/28/09

This was pretty easy to make. I didnt have feta cheese so used a mexican cheese called Fresco. We are experimenting with different cheeses in the house. We added some diced, seeded tomatoes to the mix and OMG it was sooooooo good.. Thank you for sharing and husband actually said: "It's a keeper" - 7/19/09
