Vietnamese Portobello and Shrimp Lettuce Wraps with Nuoc Cham Sauce

1 tbsp Olive Oil 0.5 large Onion, diced2 cup, pieces or slices Mushrooms, portobello or maitakes 3 oz Orca Bay Pink Shrimp, drained0.5 cucumber (8-1/4") Cucumber (with peel) 10 leaves Basil 2.3 cup (8 fl oz) Water, tap 0.5 cup Lime Juice 2 tbsp Fish Sauce 0.25 cup Granulated Sugar 0.5 tbsp Asian Chili Paste 2 clove garlic 0.25 cup, grated or shredded Carrots, raw6 leaf outer lettuce leaves
1. saute the onion and mushroom slices until brown in the oil, about 10-15 minutes.
2. add 1 can mini shrimp until heated through
3. mix the water, lime juice, fish sauce, sugar, chili paste, garlic, carrots for the sauce.
4. serve on the lettuce leaves with basil and cucumber and extra carrots with dipping sauce
Serving Size: makes 2 meals (~3 leaves each)
