Modified Applesauce Oatmeal Muffins

1 cup old fashioned oats1 cup 2 % milk1/2 cup applesauce (unsweetened)2 egg whites1/2 cup white flour1/2 cup whole wheat flour1/2 cup light brown sugar1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon1 tsp. sugar1 tsp. vanilla
This recipe makes 12 muffins.
Start my mixing the oats and milk together and allowing the oats to soak for one hour. After an hour, add the vanilla, egg whites, and applesauce to the oats...set aside.
In a large/medium mixing bowl mix together all dry ingredients. Mix well.
Add oat mixture to dry ingredients and stir until completely combined. Pour into greased or lined muffin tin.
Bake in a 400 degree oven for 20 minutes.
