Healthier Rhubarb Muffins

Reduced Calorie Syrup, 1/2 cup Smart Balance 50/50 Butter Blend, 2 tbsp Applesauce, unsweetened, 1/8 CFat Free Sour Cream, 1 C Egg Substitute, 1/3 cup Flour, white, 1.5 cup Baking Soda, 3/4 tsp Cinnamon, ground, 1 tsp *Rhubarb, 1.5 cup, diced Granulated Sugar, 1 TblspnCinnamon, ground, .5 tsp
Heat oven to 375 degrees F. Dice the rhubarb into chunks about 1/4 inches. Put the syrup, butter and applesauce in a large bowl and beat at medium speed until creamy. Add the sour cream and eggs and beat until well mixed. Stir in the flour, cinnamon and baking soda, just until moistened. Fold in rhubarb. Divide batter into 15 muffin cups. Mix together the 1 tablespoon sugar and half teaspoon cinnamon and sprinkle on top of muffins. Bake for 30 minutes or until lighlty browned. Let stand 5 minutes then remove from pan. Enjoy!
