Mediterranean Three Bean Saute

Ingredients
1 1/2 cups canned chickpeas3 cups canned dark red kidney beans4 cups frozen cut green beans2 cups canned corn1600 grams crushed tomatoes (approx. 56.5 oz.) You can use the Italian seasoned tomatoes if available.1/4 cup of olive oil (more or less to taste)finely chopped fresh basil to tastesalt, pepper, garlic powder to taste
Directions
Drain and rinse the beans.

Combine all ingredients in a skillet, seasoning to taste. Simmer until heated through. Serve with fresh bread or topped with grated cheese if desired.

This recipe is delicious and is so easy to toss together when time is short!

Makes approximately 13 1 cup servings.

    I forgot to buy kidney beans - so i added extra of everything else. I found it a little TOO tomatoey. Be warned that you need a HUGE skillet - and i recommend adding some extra spices. I haven't tried it with the chili powder and oregano i added for leftovers yet - but i think it will round it out. - 9/10/08

    I mixed this with some cooked orzo pasta and it was a hit. We didn't have red kidney beans, so I just added extra chick peas. Even the kids loved it. - 5/30/08
