Blue Cheese Dressing (fresh)

Ingredients
2/3 cup half and half 2.3 cup mayonnaise1 oz crumbled blue cheese (or Roquefort) (about 2 or 3 tablespoons)4 teaspoons tarragon vinegar1/2 teaspoon kosher salt (or to taste)1/4 teaspoon freshly ground black pepper (or to taste)
Directions
Mix all ingredients in a food processor (a mini one works great) until smooth. If desired, add a few very small sprinkles of additional blue or Roquefort cheese for texture. Refrigerate at least an hour for full flavor.
