2.0 tbsp Curry powder1.0 tbsp Salt3.0 1tsp Coconut Oil1.0 cup, chopped Carrots, raw3.0 cup Cauliflower, raw2.5 cup, cubes Eggplant, fresh0.5 cup, chopped Onions, raw0.75 cup Peas, frozen2.0 cup, cubes Sweet potato2.0 slice, medium (1/4" thick) Red Ripe Tomatoes2.25 cup Chickpeas (garbanzo beans)2.3 cup Rooster Brand Coconut Milk
Directions
Put oil in pan, then add vegetables. Add curry and other spices after then add coconut milk and additional water and simmer until most of liquid is done Serving Size: Makes 5 servings
