Sweet and Sour Pork

Ingredients
1 lb cubed pork tederloin2 tsp olive oil3/4 cup minced onion1 clove garlic, crushed1 tbsp plus 1 tsp of corn starch1 cup pineapple juice (reserved from can)4 tbsp tomato sauce2 tbsp vinegar1 tbsp soy sauce1 tsp brown sugar1/4 tsp curry powder3 strips lemon peel (optional)1 cup green pepper, cut into strips2 cups brown rice, prepared according to pkg
Directions
-Heat pan with olive oil and brown pork, onion and garlic together.
-Sprinkle meat and onion mixture with corn starch
-Mix together the pinapple juice, tomato sauce, vinegar, soy sauce, sugar, curry and lemon peel and add to meat mixture
-Bring to boil and remove from heat
-Transfer to oven safe dish (if necessary) and bake at 350 degrees for 1 hour
-Add green peppers and pineapple chunks during the last 5 minutes of cooking
-Serve over brown rice
