Ham, Egg & Cheese Muffin Cups

Ingredients
7 large eggs 1/4 cup milk3/4 cup shredded 2% cheddar cheese1 cup diced red onion12 slices shaved brown sugar ham lunchmeat (like Oscar Mayer)1 TBSP Olive Oil1/8 tsp Garlic powder1/2 tsp Tabasco1 tsp salt1/2 tsp pepper1 tsp dried parsley
Directions
Makes 12 muffins.

Saute diced onions in Olive Oil until clear, add diced ham to the pan and cook until slightly brown and then set aside to cool.

Set oven to 350 Degrees.

Combine eggs, milk, Tabasco, garlic, parsley, salt and pepper in a bowl. Add shredded cheese and stir together.

Slowly add the cooled ham mixture to the egg mixture and then spoon into a 12 cup muffin tin. I've used silicone and throw away tin pans, the tin ones needed a spray of non-stick cooking spray (like Pam) the silicone ones didn't need anything.

Place in oven on center rack and cook for about 15 minutes. When done the eggs should bejust barely done on top and slightly dry. They will cook more from the carryover heat when you take them out of the oven. DO NOT OVERCOOK.

    These are great for busy or lazy mornings. They also freeze well so you can make a tray and have them ready to go when needed. Defrosting and toaster oven time about 15 minutes. - 6/7/08

    hubby and I both loved it! Instead of garlic powder I used roasted garlic. I also used muffin papers and the egg got stuck on them so next time will just use the muffin tin and some cooking spray. - 6/1/08

    I haven't made this yet, but to quote another reviewer "I can't believe they are good for you!" I'm not so sure it is. Ham, 2% cheese and presumably whole milk? The saturated fat alone says to me that this would be OK occasionally, but not for everyday. - 1/24/09

    Made these last night & reheated them for carpool this morning, really liked em. Didn't do the onion or parsley and substituted the Tabasco for Tony's. I did reduced the olive oil as well to half and Pam'ed tin. Result was still kinda greasy but very easy, convenient for a quick healthy breakfast! - 3/5/09

    I agree that the salt has to be a typo. I used 1/4 tsp, and it was still a bit salty. To reduce fat, etc., I used 4 eggs, & egg whites & egg substitute. Had about 68 grams of Canadian Bacon that I needed to cook, & used thin sliced oven roasted turkey breast to finish out. Was very good. - 2/1/11

    Substitute skim milk, low fat mozarella cheese, use turkey bacon or lean turkey sausage and use half whole eggs or egg substitute and half egg whites (example 3 whole eggs, 4 egg whites). This will greatly reduce the total fat. Leave out the salt entirely. Sausage and bacon have plenty. - 2/22/16

    Made a batch for the week. They are so easy to grab, warm-up, and eat. I think I will reduce the onion next time and add some other veggies. I used muffin cups too and they stick to it. Next time I will use a muffin tin. - 8/22/12

    Way too much salt. All the seasonings seemed to float to the top of the eggs. Even after spraying the muffin tins they didn't want to come out of the pan. Made only 9 servings instead of 12. Not a complete disaster, but I won't make them again unless there's a LOT of tweaking. - 6/6/12
