Little Miss Zucchini Muffin

Ingredients
3 Slices porvolone, grated 2 cups zucchini, shredded3 Tbls onion, chopped1/2 cup seasoned bread crumbs1 egg1 egg whiteMix all ingredients together and spoon into well-greased muffin cups.
Directions
Bake @ 375deg for 20 min. The muffins should be golden brown and puffy. Makes 12 regular muffins.
