1 cup Whole Wheat Pastry Flour 1/4 cup=30grams 1 serving Biotrust Vanilla Cream Protein Powder (2 scoops) .5 tsp Nutmeg, ground 1 tsp Cinnamon, ground .13 tsp Salt 1 serving baking soda 1.5 cup, mashed Zucchini 3 tbsp Salted butter 85 gram(s) Chobani Plain Greek Yogurt 1 serving Marketside Cage Free large brown egg 2 tsp Vanilla Extract 90 gram(s) Great Value Honey 1 tbsp=21 grams
Preheat oven 325 and line muffin pan with muffin liners. MIx until yogurt is well incorporated into the ingredients. Stir in cooled butter and zucchini (remove moisture from zucchini by blotting with paper towels). In a separate bowl whisk together the flour, protein powder, nutmeg, cinnamon, salt and baking soda. Fold in dry ingredients into wet ingredients just until combined. Don't over mix. Fill muffin liners with the dough and bake for 17 minutes. Cool and enjoy!
