Baby Spinach Salad with Strawberries and Toasted Almonds

1 tbsp balsamic vinegar3 tbsp olive oil1 tsp Dijon mustard2 tsp agave syrupsalt and fresh ground pepper to taste1 cup fresh baby spinach1 cup sliced strawberries1/3 cup slivered almonds, lightly toasted
Makes 4 generous servings
Combine the first 5 ingredients in a salad bowl. Add the spinach, strawberries and almonds and toss to coat well. Divide the salad into four equal salad bowls and serve.
Note. To toast the almonds, place them in a single layer in a small baking pan. Bake in a 300 degree oven for 10 minutes, or until lightly toasted.

Brought this to our ladies night gathering and everyone loved it. I used one full bag of spinach instead of the 1 cup, substituted 1/2 t. sugar for the agave syrup, and used one full carton of strawberries (because I love them!). Normally don't like balsamic, but this dressing definitely works! - 4/3/11
