Asian Turkey Lettuce Wraps

1 tbsp Extra Virgin Olive Oil 16 oz Turkey, Ground turkey, 93% lean 2 clove Garlic 74 gram(s) bell pepper, red, sweet, raw 1 small Onions, raw 4 tbsp Hoisin Sauce 2 tbsp Soy Sauce .3 tsp Ginger Root 1 cup Brown Rice, long grain 2 medium (4-1/8" long) Scallions, raw 1 head (5" dia) Bib Lettuce
1. Heat olive oil in a saucepan over medium high heat.
2. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat and set aside. Add garlic, bell pepper and onion to the saucepan. Cook, stirring frequently, until tender, about 3-4 minutes.
3. Stir in hoisin sauce, soy sauce, ginger and ground turkey until well combined. Add rice and green onions and gently toss to combine.
4. To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style.
Serving Size: Makes 4 servings of 4-5 wraps
