Green Curry Coconut Soup with Bok Choi and Tofu

1 cup (8 fl oz) Chicken Broth 6 slices (1" dia) Ginger Root 4 tbsp Curry Paste, Green, Thai Kitchen 3 cup Baby Bok choi uncooked 1.5 cup Coconut milk (light) 1 block Tofu, firm1 tbsp sesame oil
Combine coconut milk, broth, ginger, curry paste, salt, and jalapeno and heat until gently boiling, reduce heat, simmer. Add bok choi and red pepper, cover and cook for 4-5 minutes until the bok choi is wilted. Meanwhile, cut tofu into squares (2x2) season with salt & pepper and brown in sesame oil. When broth is heated, add tofu to broth and vegetables. Cover and heat for a few more minutes.
