Onion and pepper smothered round steak

Ingredients
1 lb 11 oz beef steaks (cut into strips or chunks)3 cans beef broth1 1/2 Emeril's Essence3 Tbsp veg oil4 Tbsp all purpose flour2 Tbsp chopped onions (or more as desired)1 tsp salt1/2 tsp cayenne 1/2 tsp freshly ground pepper4 Tbsp corn starch8 oz Healthy Harvest whole wheat egg noodles
Directions
Combine meat the Essence seasoning and flour.

Heat oil in skillet and brown meat on all sides. Add 2 cups of beef broth and stir to loosen browned particles. Add onions (and peppers if using), and salt, cayenne and black pepper. Cook stirring frequently for 6 to 8 minutes. Reduce heat to medium, cover and cook stirring occasionally for 15 minutes. Add remaining beef broth and continue to cook uncovered, for about an hour. Until the meat is very tender and the gravy is flavorful.
While meat is finishing, prepare noodles (or rice if perferred). Mix noodles into gravy and beef mixture at the end of the beef cook time. (If using rice, spoon the beef and gravy over the rice when serving).
Emeril's Essence Creole Seasoning Recipe:
This can be purchased in the spice aisle of the grocery store.
2 1/2 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp salt
1 Tbsp black pepper
1 Tbsp onion powder
1 Tbsp cayenne pepper
1 Tbsp dried oregano
1 Tbsp dried thyme
Mix and combine thoroughly.

    Change up: I omitted the spicy spices. Yellow onion sauted until just starting to brown, added smashed garlic last min. or so. added green, yellow, orange pepper, thin sliced, along with the onion / garlic added all to already browned beef with broth.     I rate this 5 stars, I used whole grain noodles, I also put yellow, green peppers, the fresh onions and fresh garlic. If you don't want it too spicy cut back on the cayenne pepper. I am going to used this seasoning on other recipes. My friend and I love this recipe. - 9/21/09
