Sweet and Sour Chicken

2 chicken breast, split and skinned1 81/2-ounce can unsweetened pineapple chunks1 cup cranberry sauce2 tbsp vinegar21/2 tbsp brown sugar1/2 cup chicken broth2 tbsp cornstarch2 tbsp water1 green pepper, cut into long, thin strips
Place chicken into baking dish. Drain pineapple, reserving juice and set aside.
In a separate saucepan, combine cranberry sauce, vinegar, brown sugar and broth. Then mix the cornstarch with 2 tbsp of water until smooth and add to reserved juice. Add all to sauce mixture. Cook sauce until thickened. Add pineapple chunks to sauce and pour over chicken. Cover and bake at 350 degrees for 35 minutes. Uncover, add green pepper strips and baste with sauce. Bake uncovered for additional 5 minutes.
