Grilled Salmon Wraps

(17)
  • Number of Servings: 1
Ingredients
Ingredients for marinade:
  • 3/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lime zest
  • 2 tablespoons olive oil
  • 2-3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoons dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lb. salmon fillets, boneless, cut into 2" strips
Ingredients for wraps:
  • 8 whole wheat tortillas
  • cooked salmon
  • salsa mayonnaise (make with 1/2 cup salsa and 1/2 cup nonfat mayonnaise)
  • green and/or red cabbage, thinly sliced
  • green onions, sliced
  • cilantro, coarsely chopped
Directions
1. Prepare grill or oven broiler.

2. In a medium sized bowl, combine all marinade ingredients and mix well. Add salmon strips, cover with plastic wrap and refrigerate for 30-60 minutes.

3. While salmon is marinating, prepare all wrap ingredients and set aside.

4. Remove salmon strips and drain well. Grill or broil salmon until done or until it flakes with fork.

5. To prepare a wrap, take a tortilla and spoon a layer of salsa mayo in the center. Add a thin layer of cabbage, green onions, cilantro and the desired amount of salmon. Fold the tortilla up halfway to the center of the ingredients then roll either the right or left side of the wrap to the other side and serve.

Makes 8 wraps.

I tried this recipe and loved it. I am not an experienced fish griller so I broiled my salmon instead. I took the marinaid sauce and put it in the broiler instead of regular water and it added more flavor to the fish. It was great Loved it. Thanks! - 4/6/08

Since it's listed under Fish/Vegetarian, leaving out the chicken broth for this category would be key. - 3/30/08

The garlic and oregano lead this toward a Tex-Mex flavoring, but it could use some chili powder and red pepper flakes to take it all the way. I used lime juice instead of lemon, along with the lime zest and thought it was a pretty decent recipe overall. - 3/30/08

It was god...except for the strong flavour of cabbage. I substituted it with iceberg lettuce. - 3/30/08

Why Thyme and Oregano? There is no need to add so many ingredients.Lemon, Lime zest and Thyme would balance the taste of the fish very well, there is no need for Garlic and Oregano. The wheat tortillas are too dry with the fish. - 3/30/08

This sounds really good! Our family, including my 4 kids, love salmon so we're always looking for new ways to eat it. Fish tacos are a particular favorite of the kids. - 3/30/08

I am new here and this is the first recipe I have looked at, so I have a questions. It says it makes 8 wraps, but how many wraps are in a serving? One? Thanks for any help on this. I would love to make these this week. - 3/30/08
