Matthew's Best Mediterranean Salmon

Ingredients
4 piece Sun Dried Tomatoes1/2 fillet Pink Salmon (fish)1 dash Salt1 dash Pepper, black1 Lemon, fresh squeezed1/4 tsp Mrs. Dash (R) Lemon Pepper Seasoning Blend
Directions
Firstly, Preheat oven on bake to 325°F (ensure rack positions are center and top). Then, cut and prepare the salmon. Next, prepare baking dish by spraying with your favorite non-stick baking spray or a light covering of vegetable oil (Pyrex or metal is preferred). Next, brush your fillet with your freshly squeezed lemon juice (If you still have the rind you can Julienne pieces and lay them in over top). dash your fillet with salt, pepper, and lemon pepper. Afterwards, place sun dried tomato pieces on top (optional: drizzle with sun dried tomato oil). Penultimately, put salmon in oven on middle rack until par-cooked (A meat thermometer is key here). Finally, take out fish and set oven on broil to 525° take out fish when top layer of spices is slightly browned, caramelized, or burned and dish is cooked. Serve and enjoy.
