Deb's Cinnamon Applesauce Banana Bread

Ingredients
2 cups flour3/4 cup sugar3 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 large egg3/4 cup skim milk1/4 cup cinnamon applesauce1 1/2 cups mashed bananas
Directions
Preheat oven to 350 degrees. Grease bread loaf pan, unless it's nonstick. Mix all dry ingredients in a large bowl - be sure to mix well. Mix all wet ingredients in another bowl - be sure to mix well. Add wet mix to dry mix and stir thoroughly. Put into bread loaf pan and bake for approximately 55 to 65 minutes. Check the color around 50 minutes - it should be a nice golden brown. Insert a toothpick in center to check if it's done. The toothpick may be moist from bananas - just be sure it's not moist from batter. Let bread cool in pan for 5 to 10 minutes. Run a knife along outside edge to loosen sides before placing on a cooling rack. Cut into 12 slices.

    I made this with half AP/half ww flour as suggested. ALSO, instead of using skim milk, I used the whey I drained from some homemade fat free yogurt. It's VERY good, and my 6 year old loves it. I'm taking a loaf to work on Monday to share. - 8/28/10

    Very good. I used half whole wheat & half white flour, and 1/2 cup white sugar, 1/4 cup brown sugar/splenda, 1/2 cup non-fat Greek yogurt, and 2 tsp baking powder, since I was out of baking soda.Dense and moist, plenty sweet enough. Love the - 10/31/09

    Very good! I took the advice of using half whole wheat flour and half white. I also didn't have cinnamon applesauce, so I used unsweetened applesauce and 2 tsp. of cinnamon. I made 12 regular-sized muffins, and my kids love them! Thanks for a great recipe! - 10/22/08

    I made these with 1 cup wheat flour and 1 cup white flour. I made it into mini muffins and they were very moist and good - 9/23/08

    Thanks for rating my recipe! I like your idea of using wheat flour. I never have that around the house - I'll have to pick some up and try it. Also, I like your idea of making mini muffins. It would save me from slicing piece after piece for my kids when they are hungry.
