Directions
Chop up all of your vegetables and put into a bowl. Mix in chopped cilantro, then add lime juice, vinegar, salt and pepper. Mix well then add olive oil and mix and leave to marrinate.

    Loved this recipe, It goes well with many curried dishes, Its even excellent without the tomatoes, and the cumcumber can be grated instead of sliced, and served chilled!Also it can be added to sandwiches, burgers etc, for that extra bite. - 5/31/12
