Roasted Veggie Pizza

Ingredients
One Joseph's Heart Healthy Low carb pitaOne wedge Laughing Cow LIght Swiss cheese1/2 cup sliced summer squash1/2 cup sliced small zuchini1tbs olive oilSalt/Pepper2 TBL grated ParmesanFresh herbs (I used Cilantro)
Directions
Roast veggies with Olive oil, salt, pepper and herbs in oven at 350 for about 1/2 hour.
Spread the Laughing Cow on the pita, top with veggies, then sprinkle parmesan on top. Return to oven for another 20 minutes or so.

Play around with roasted veggies/spices/herbs.
